Molasses Cookies

These unique cookies are made with our Gourmet Pancake & Waffle Mix.

Ingredients

  • 1/2 cup Butter
  • 1/2 cup Shortening, not margarine
  • 1 1/2 cups Sugar
  • 1/2 cup Molasses
  • 2 Eggs, slightly beaten
  • 4 cups Robert Rothschild Farm Gourmet Pancake & Waffle Mix
  • 1/2 tsp. Salt
  • 2 1/4 tsp. Baking soda
  • 2 1/4 tsp. Ginger, ground
  • 1 1/2 tsp. Cloves, ground
  • 1 1/2 tsp. Cinnamon, ground
  • Directions
    1. In a large mixing bowl, cream together butter, shortening and sugar. Beat in molasses and eggs, set aside.
    2. In another bowl, combine Gourmet Mix, salt, baking soda, ginger, cloves and cinnamon. Blend with wire whisk. Gradually mix batter mixture with creamed ingredients until dough is blended and smooth.
    3. Spoon onto greased cookie sheet. Bake at 350 degrees F for 11 minutes. Do not over bake. Cool on a wire rack. Store in a tightly covered container to maintain softness. Makes 3 dozen cookies.
