Mediterranean Layered Dip

This fantastic dip featuring our Roasted Eggplant & Pepper Hummus will jazz up any party!

Ingredients

  • 7 oz. Robert Rothschild Farm Roasted Eggplant & Pepper Hummus
  • 1 cup Baby spinach, chopped
  • 1/2 cup Tomatoes, chopped
  • 1/4 Red onion, chopped
  • 1/4 cup Feta cheese
  • 2 Tbsp. Kalamata or black olives, sliced
  • 1/2 cup Cucumber, shredded
  • Toasted pita wedges or pita crisps
  • Directions
    1. Spoon half of the Roasted Eggplant & Pepper Hummus in the bottom of a serving bowl. Layer on baby spinach, tomatoes, red onion, feta cheese and olives. Top with remaining Roasted Eggplant & Pepper Hummus and cucumber.
    2. Serve with toasted pita wedges or pita crisps.
