Hot Peach & Apple Rice Pudding

A unique rice pudding recipe featuring Hot Peach & Apple Chutney.

Ingredients

  • 1 cup Rice, cooked
  • 1 cup Coconut milk
  • 1 1/2 cups Milk
  • 3 Eggs
  • 1/2 cup Sugar
  • 1/2 cup Robert Rothschild Farm Hot Peach & Apple Chutney
  • 1 tsp. Vanilla
  • 1/2 tsp. Salt
  • Cinnamon
  • Confectioner's sugar
  • Directions
    1. In a large mixing bowl, combine the cooked rice, coconut milk, eggs, sugar, Hot Peach & Apple Chutney, vanilla and salt. Pour ingredients into a 9 inch round baking dish.
    2. Place baking dish inside baking pan with about 3/4 inches of hot water surrounding rice pudding dish. Bake in a 325 degrees F oven for about 1 1/4-1 1/2 hours until rice pudding is lightly browned on top and set.
    3. To serve, spoon some rice pudding into a glass or small bowl and sprinkle with some cinnamon and confectioner’s sugar.
