Fruit Filled Muffins with Wild Maine Blueberry Preserves

A great muffin recipe featuring our Wild Maine Blueberry Preserves.

Ingredients

2/3 cup Milk

1 Tbsp. Vegetable oil

1 Egg

2 cups Baking mix

2 Tbsp. Sugar

1/4 cup Robert Rothschild Farm Wild Maine Blueberry Preserves

2/3 cup Powdered sugar

3-4 tsp. Water

Directions
1. Grease bottoms of 12 medium muffin cups. Stir milk, oil and egg in medium bowl until well blended. Stir in baking mix and granulated sugar just until moistened. Divide batter evenly among muffin cups. Drop 1 level teaspoon of Wild Maine Blueberry Preserves onto center of batter in each cup.
2. Bake 13-18 minutes. Cool slightly; remove from pan. Mix powdered sugar and water until smooth, drizzle over warm muffins. Yields 12 muffins.
