Blueberry Muffins

A wonderful blueberry muffin recipe using our Gourmet Pancake & Waffle Mix.

Ingredients

  • 2 1/2 cups Robert Rothschild Farm Gourmet Pancake & Waffle Mix
  • 1/2 cup Sugar
  • 1/2 cup Milk
  • 2 Eggs
  • 2 oz. Melted butter
  • 1 heaping cup Blueberries, fresh or frozen
  • Directions
    1. Add first 5 ingredients in a large mixing bowl and mix well. Fold in blueberries.
    2. Spoon the batter into cupcake pans lined with paper liners.
    3. Bake at 350 degrees F for 20-25 minutes. Makes 1 1/2 dozen muffins.
